Last week I finally invested in a kitchen appliance I’ve wanted for years – a juicer! I have a terrible time getting enough fresh, raw foods into my daily regimen. With a juicer, I can get more than enough fruits & veggies in and not only does it taste amazing – I DONT HAVE TO COOK A THING. Win! Here’s what breakfast has looked like for me this week:

This has been the best purchase I’ve made in a while. I’ve been making 2-3 different juices a day and feeling great! Mel suggested I watch Fat, Sick & Nearly Dead if I was interested in juicing – if you’ve got a juicer and don’t use it often, this will get you motivated!

Recipe: Homemade Hummus

Confession: I hate cooking. Mostly because I’m impatient and dread the mess it involves. But I’m trying to get over it. One of my favorite foods is hummus, which I recently ventured into making. You know what? It’s SUPER easy to make, and if you make a big batch, is a great, healthy snack to keep in the fridge. I almost always have some on hand!

Another confession: I hate recipes. Ridiculous, I know. Exact measurements just aren’t for me. Unless baking (which is all science), I just use a recipe as a guideline and tailor to my taste.

Here’s a rough sketch of Hummus ala Burback:

2 cans of chick peas (drained)
2 lemons
1/4 cup chopped onions
handful of celery + celery leaves
1/4 cup olive oil
1 clove garlic
4 tbsp tahini
salt, to taste
splash of water
dash of red pepper flakes

Toss all that good stuff (save for the water and lemons) into a food processor. Juice those lemons right into the mixture. Add a splash of water, just enough to give everything some movement.

Process and….

…..voila! HUMMUS!

Serve with fresh veggies, triangles of toasted pita, spread on a sandwich or pair with falafel! I recommend storing in the fridge in small tupperware containers – easy to grab for a snack!

I’ve been making an effort to eat less processed foods and cook for myself. This lunch of homemade strawberry lemonade and a facon*/avocado/cheese sandwich was one of the best meals I’ve had in a long time! While I’m not keen on seasonal high temps, I do love the fresh produce this time of year. When you can’t slip fruit into a meal – try making a beverage with it!

Mac n’ Cheese

Last night I had a fabulous time with some fellow Chicago bloggers, who are quickly becoming some of my favorite gal pals. The impetus was a fancy fashion party at Cynthia Rowley (thanks for the invite, Amy!). We sipped some champagne, gnoshed on chocolates and did some great people watching.

We stayed for a bit, then high tailed it across the street for even more champagne and indulgent consumption to celebrate Tabitha’s upcoming birthday (it’s tomorrow!). I didn’t get a whole lot of photos at the event, but I did take pictures of our meal…..yes, this says a lot about my priorities. I filled up on champagne and a healthy high calorie meal, accompanied by many laughs and much fun. A perfect evening!
